House made Dungeness Crab Ravioli

Pasta Dough Ingredients
  • 2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 3 large eggs, plus 1 for egg wash
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons water
  • One large egg, for egg wash*
Sift 2 cups of flour into a mixing bowl, add salt into flour.
Make a well in the flour and add eggs, EVO and water.
Mix with a hand mixer until all ingredients form a ball
(about ten minutes)  make sure all ingredients are well
blended the dough should not be sticky to the touch
if it is then add a little flour until the mix is firm.
Wrap with plastic and let stand about an hour.

Making Pasta
On smooth hard surface (not a wood board) flour the surface lightly, cut the dough ball in half and wrap the unused half for later. Roll out the dough until it is about 1/8 inch thick (you should see you fingers through the dough), I like to make two pieces of dough the same size.
Lay out your first sheet and add your favorite filling about a teaspoon size dollop  then brush the egg wash around the filling covering the entire sheet, take your second sheet and lay it on top of the first and gently smooth out any air trapped inside, cut to any shape you desire! Lay ravioli on a sheet pan lightly dusted to prevent sticking.

Dungeness crab Filling
Add 3 cups Dungeness crab meat, 1 cup ricotta cheese and 2 cups shredded Mozzarella cheese and mix until a smooth texture , salt and pepper to taste

Cooking Pasta
Bring 4 quarts of salted water to a rapid boil, add ravioli and cook for about 4 minutes (when ravioli is done it will rise to the surface) do not overcrowd the pot! Take out cooked ravioli with a slotted spoon and place on paper towels to dry.

Sauce
In a sauce pan add two tablespoons of Olive oil and heat it up! Then place one cup pasta sauce (I like to use homemade) but a good marinara works just as well, you will hear the crackle of the sauce when it hits the hot oil and it should bubble right away, then add a ¼ cup of cream and wisk until blended, reduce heat and add a pinch of salt and pepper to taste.  Plate, Sauce and enjoy!
