Little Pizza People

Its late on a Friday night and I really want to write something brilliant! but I cant, and I cant even blame it on writers block, some weeks are just tougher than other, you know what I mean? long days writing new menu changes, building marketing strategies and making sure the restaurant is "fresh" and exciting takes its toll on ya! so tonight I was looking through my pics and found this one of a little Pizza guy in Naples Italy circa 2009 when the Food Network came to Naples with us and filmed "Glutton For Punishment" and as I was looking at this picture I remembered what this is all about

Just look at his smile, I see those smiles on the kids that come into the restaurant and that is why I do what I do, work the long hours, plan for growth, keep the restaurant meticulously clean and make sure the specials are the best that they can be, our customers love us, they really do, and after all the dust settles the customers are the reason we keep doing it,

its so worth it, crazy huh? but so worth it, I will see you at the restaurant, can't miss me, I have the big smile on my face

Cleanliness equals success!

Ok it may not be that easy but what if you have a restaurant that is hitting its numbers I mean making a killing BIG NUMBERS! and it is the dirtiest place in town! well then I guess cleanliness is not answer is it?

It is and it isnt, I am going to explain that in detail later today, but now I am going overt to the restaurant the dirty one! the one that will be increasing sales by an estimated 30% when we reopen it!

Kitchen impossible? no

Its Fall in Nor Cal the best time of year!

Ok I say that about thanksgiving and Christmas too! but fall is really my favorite, maybe its because I love having a fire in the stove every night or because the Harvest allows me to stay in and Can everything I have grown but what ever the reason it is a great excuse to add great new recipes to the menu and cook hearty meals that everyone enjoys.

The Harvest Fair Culinary Competition just ended and SeasonS added Six new Medals to our collection: Double Gold with our House made Chipotle Sausage (also read my article in Pizza Today Magazine Sept Issue, How to make fresh sausage in house) Silver Chipotle Fire Sauce,Silver Seafood Wood Fired Pizza, Silver House made Chicken basil sundried tomato sausage,Silver Heirloom tomato Wood Fired Pizza and a Bronze for our Tri Tip Slider!

It is always fun to cook at the Harvest Fair, the kudos the judges give are nice but when someone stops and smiles and says "thats soooo good" well-----thats why I do it, I love this crazy profession and I guess that shows in our recipes!

Theres nothing like the Rio Nido Road House!

Last weekend I was out at Stump Town Brewery for the Big Green Egg on the River cook off, it was sponsored by Asiens Appliance and Stump Town anyway I was presenting a Demo on cooking Pizza on the Egg, its an amazing oven! yes I said Oven because the Egg cooks Pizza as close to a wood fired oven as anything I have seen. So the demo went great and it was nice to share some recipe tips with the people there, and they came from Fresno, Sac town, all over Nor Cal its like a little mini cooking cult!!!! cooks passionate about what they are cooking and eager to learn and share with others of the same mind set!

Chris and Paul the owners of Asiens are two of the nicest guys around so a big thanks to them for including me in the party, the demo was fun and in my rush to get back to the restaurant I almost forgot that I told my friend Brad that I would stop and have a beer at his place, the Rio Nido Road House, just a mile down the road on the right, can't miss it! old funky dirt parking lot with towering Redwood Trees in it, you can see the pool in the back surrounded by lawn and picnic tables off to the left is the stage where the local Bands play on the weekends next to that is the BBQ pit! and I saw all that from the parking lot :) so I walk up the stairs right into the Bar, I see Kim behind the bar as I pass the kitchen and stroll out onto the covered patio, and then it hits me, the sound of splashing, kids laughing, parents lounging on the lawn, a group of Golfers from the local course sitting on the patio and suddenly I am 8 yrs old again! the flood of memories comes right back as I settle into my seat at the bar and Kim gives me a hug and starts mixing me a Margarita I turn around and say hey to Brad who is on the grill in the tiny little kitchen with his two sous chefs grilling up magic and it all comes back.

"I am with my dad and brothers and sis its another Sunday afternoon and we are at Uncle Petes house, swimming, Sinatra and Martin playing loud, all the parents sipping some frozen drink while laughing at the latest neighborhood gossip, and all the boys stair at Darlene's new bikini with smiles filling our faces"

The Rio Nido Road House is one of those places that brings back all the great memories you have as a kid, this is the kind of place that generations of families still come to and share with the new grandkids, friends, or like me a total stranger sitting at the bar with I think her name was Sue and she asked me how long I have been coming to the "house" first time I said as my hands ran across the beat up bar that felt so good, "well we have been coming here for 50 years, every summer and we will never stop" I could go on and on about this place but you really have to go see it yourself, its just 20 minutes from Santa Rosa out Guernville Rd on the right past Korbel, take the whole family, say hi to Brad and Kim, dip those toes in the pool and stay the day, its magical, its one of those places that is so special even when its your first visit.

And thanks you guys, for bringing me back memories that I cherish, can't buy that at any price!

FOOD:
The grinders are off the hook great, they come in a little paper basket with no fan fare except how great they taste. I hear the Margherita Pizza is to die for, and the BBQ tri tip s well.
DRINKS: They have it all! with a great beer that you have to ask for because its not one that is available all over "forgot the name" kim's gonna kill me but ask her she will know what you are talking about.
POOL: Its a great place to kick it and enjoy the sun!
PICNIC: there are lounge chairs, tables and a great area to hang and sip a frosty cocktail and eat some great food.

Have fun, and make some memories with your family and friends.

People, make the differance

I was in the restaurant last night and at the end of service I made my way through the dining room to say hi to some regulars and make sure the customers I didn't know were happy! the last table I came to was a couple and they had two Margherita Pizzas and they said that was the way they had it in Italy!

I cant really tell you how many conversations I have started with people only to find out how much we had in common, traveling, food, stories about places that have changed their lives and given memories that they will never forget. This was no different------wait this was totally different because after talking to these customers and sharing a bunch of stories about travel and Italy, the restaurant and how just letting go and being open to new adventure can give you so much joy, I thanked them for "making my day" and they really did, its people that make everything we do much more fun, cooking, traveling or just maybe walking up to a few guys at a bar and buying a round of Patron!

The people that you meet everyday give you a gift, its up to you to find it!

Thanks for making my day "Sebastopol friends" I really appreciated meeting you last night and will see you again real soon.

Sum Sum Summer time!

I love Summer time, the kids swimming in the pool, the garden is in full grow mode (I have tomatoes ripening right now!) and the fresh local growers are peddling their produce at the Wednesday night markets I really love summertime. The latest Pizza Today Magazine offers up some very nice recipes using fresh vege combinations and not just the old same chopped stuff you find everywhere these recipes are full of thick button mushies, zuchini, broccoli fresh Basil and peppers!, one on my favorites is the grilled vege pizza with Chipotle Sauce.

Using fresh in season local ingredients is one of the most important things a Chef can do to keep customers coming back for more, when you think about it supporting our local farmers and producers is just as important as our customers supporting us.

From a marketing standpoint, supporting the locals is big, use it in all your marketing let everyone know what you do to create your awesome recipes and that in turn increase your profits and most importantly your customer loyalty!

The 2011 Pizza Expo was awesome! come on 2012

And yes I really am that excited about 2012! I have to say that this years expo was great I met so many people when doing my cooking demos and the seminars. I cannot thank Pizza today Magazine enough, Pete Lachapelle, Linda Kieth, Bill Oakly, Patty Crone I mean there were so many different PTM staffers that stepped up! hey Bruce great to meet you and I cant wait to do it again next year! so really THANK YOU PIZZA TODAY MAGAZINE! for yet another great pizza expo.

Happy New Year! and my only resolution----really!

My only resolution is to write MORE! I love writing and have not done enough of it, so thats it I will start today with some great wood fired pizza recipes and pics tonight! and if you have any suggestions then now is the time to let me know all about them.
The new Seasons Pizzeria Sports Bar and Grill will be open soon and I cannot wait! we have been working very hard on completing and yesterday we finished the Kitchen flooring now its all about the finishing touches so a couple more weeks and we will be there! ready to open.
I hope you all have a very happy new year and I will see you soon at the new restaurant! and back here for some great food talk and recipes
